    Trim excess fat from the pork shoulder and pat it dry with paper towels.

    Coat the pork shoulder evenly with yellow mustard, which will help the dry rub adhere.

Dry Rub Application

    In a bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix thoroughly.

    Generously apply the dry rub mixture all over the mustard-coated pork shoulder, ensuring to massage it into the meat.

Smoking Process

    Preheat your smoker to 225°F (107°C). Soak the hickory wood chips in water for at least 30 minutes before adding to the smoker.
