    Prepare the Ingredients

    Rinse the ham hocks under cold water to remove any excess salt or brine. Peel and chop the onion, garlic, carrots, and celery (if using) into large pieces.

    In a large pot or Dutch oven, add the rinsed ham hocks, water, black peppercorns, bay leaves, garlic, onion, and salt. If adding carrots and celery, include them as well.
