Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the chicken breast, bell pepper, onion, celery, and mince the garlic. Peel and devein the shrimp if not already done.

  2. 2

    Cook the Sausage

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.

Cooking

  1. 3

    Sauté the Vegetables

Add the diced onion, bell pepper, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 4

    Add Garlic and Chicken

Stir in the minced garlic and diced chicken breast. Cook for an additional 5 minutes until the chicken is no longer pink.

  3. 5

    Mix in Rice and Seasonings

Add the rice, Cajun seasoning, bay leaves, salt, and black pepper to the pot. Stir well to combine all ingredients.

  4. 6

    Add Broth

Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes.

  5. 7

    Add Shrimp

After 20 minutes, uncover the pot and stir in the shrimp. Cover again and cook for an additional 5 minutes, or until the shrimp is pink and cooked through.

  6. 8

    Final Touches

Remove bay leaves and adjust seasoning with more salt and pepper if needed. Fluff the jambalaya with a fork.
