    Start by rinsing the ham hocks under cold water to remove any excess salt. Then, chop the onion, carrots, celery, and garlic cloves into rough chunks.

    In a large pot, add the rinsed ham hocks, chopped onion, carrots, celery, garlic, bay leaves, thyme, black peppercorns, and water. Ensure all ingredients are submerged.

    Simmer the Broth

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 2 hours or until the ham hocks are tender and the meat is easily pulled from the bone.

    After 2 hours, add the peeled and chopped potatoes and the trimmed green beans to the pot. Continue to simmer for another 30 minutes or until the vegetables are tender.
