Chicken Stew Preparation

Sear the Chicken
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper. Once the oil is hot, add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken from the pot and set aside.

Sauté Vegetables
In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

Simmer the Stew
Pour in the chicken broth and add the dried thyme, bay leaves, and the seared chicken thighs back into the pot. Bring to a boil, then reduce heat to low, cover, and let simmer for 30 minutes.

Make the Dumpling Batter
In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. In a separate bowl, mix the milk and melted butter. Combine the wet ingredients with the dry ingredients until just mixed. Fold in the chopped parsley.

Add Dumplings to the Stew
After the chicken has simmered for 30 minutes, carefully remove the chicken thighs and shred the meat, discarding the skin and bones. Return the shredded chicken to the pot. Scoop spoonfuls of the dumpling batter and drop them on top of the simmering stew. Cover the pot and let the dumplings steam for 15 minutes, or until they are fluffy and cooked through.
