Prepare the Brown Butter
In a medium saucepan, melt unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and set aside to cool slightly.

Caramelize the Apples
In a large bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, and vanilla extract. Pour the brown butter over the apples and mix well to coat. Transfer the apple mixture to a baking dish.

Make the Cobbler Batter
In a separate bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt. Pour in the milk and stir until just combined; do not overmix.

Combine and Bake
Pour the cobbler batter over the caramelized apples in the baking dish, spreading it evenly. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Allow the cobbler to cool for about 10 minutes before serving. Scoop warm apple cobbler into bowls and top each serving with a scoop of salted caramel gelato.
