Method
Winemaking Process for LA JOTA VINEYARD Red Wine
Harvesting
Begin by harvesting the ripe Cabernet Sauvignon grapes from the vineyard. Ensure to pick only the best quality grapes to maintain the wine's integrity.
Crushing and Destemming
After harvesting, crush and destem the grapes. This helps to release the grape juice and prepare the fruit for fermentation.
Fermentation
Add the yeast to the crushed grapes to initiate fermentation. Allow the mixture to ferment for about 7-14 days at controlled temperatures, monitoring the sugar levels to achieve the desired alcohol content.
Pressing
Once fermentation is complete, press the fermented mixture to separate the wine from the grape skins and seeds. This process will yield the free-run wine.
Malolactic Fermentation
Introduce malolactic bacteria to the wine to initiate malolactic fermentation, which softens the acidity and adds complexity. This can take several weeks.
Aging
Transfer the wine into French oak barrels for aging. Allow the wine to age for about 12-18 months, monitoring its development and flavor profile throughout the aging process.
Bottling
Once the aging process is complete, carefully bottle the wine. Ensure that the bottles are cleaned and sanitized to prevent contamination.
