    Harvesting Grapes

    Select and harvest ripe Chardonnay and Sauvignon Blanc grapes from the vineyard. Ensure that the grapes are free from any rot or damage.

    Crushing Grapes

    In a clean winemaking area, crush the harvested grapes to release their juice. Use a grape crusher or your hands (with clean gloves) to gently crush the grapes.

    Pressing Grapes

    Transfer the crushed grapes to a wine press. Press the grapes to extract the juice, separating it from the skins and seeds.

    Mixing Juice

    In a fermentation vessel, combine the extracted juice from both Chardonnay and Sauvignon Blanc grapes. Add the 50 grams of oak chips to impart flavor.

    Adding Yeast

    Sprinkle 5 grams of wine yeast over the juice mixture. Stir gently to incorporate the yeast evenly throughout the juice.

    Fermentation

    Cover the fermentation vessel with a clean cloth and let it sit at room temperature for 1-2 weeks. Stir daily and monitor the fermentation process until bubbling slows down.

    Adding Sugar and Water

    After fermentation has slowed, dissolve 30 grams of sugar in 1000 ml of water and slowly add this mixture to the wine, stirring gently.

    Racking

    After fermentation is complete, transfer the wine to a clean carboy or secondary fermentation vessel. Leave sediment behind in the original vessel.

    Aging

    Seal the carboy with an airlock and age the wine for at least 3 months in a cool, dark place. Taste periodically to check for flavor development.

    Bottling

    Once aged, siphon the wine into clean bottles, avoiding sediment, and seal with corks. Label the bottles with the date and type of wine.
