Desserts

  1. 1

    Prepare Dates

In a bowl, combine pitted dates and boiling water. Let them soak for about 15 minutes until softened. Once softened, mash them into a paste and set aside.

  2. 2

    Make Pudding Batter

In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking soda, and ground cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined.

  4. 4

    Fold in Dates and Pears

Gently fold in the mashed date mixture and the diced pears into the pudding batter until evenly distributed.

  5. 5

    Bake the Pudding

Preheat the oven to 350°F (175°C). Grease a pudding mold or baking dish. Pour the batter into the prepared dish and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Prepare Candied Pecans

In a small saucepan, combine chopped pecans and maple syrup over medium heat. Stir continuously until the pecans are coated and lightly toasted (about 5 minutes). Remove from heat and let cool.

  7. 7

    Serve

Once the pudding is baked, let it cool slightly before serving. Cut into squares and drizzle with heavy cream. Top with candied pecans before serving.
