Harvest Grapes
Begin by harvesting 100 kg of ripe Pinot Noir grapes from the Eola-Amity Hills region. Ensure that the grapes are healthy and free from rot.

Crush the Grapes
Once harvested, crush the grapes gently to release the juice. You can use a grape crusher or do it by hand. Aim to keep the skins intact to retain some color.

Add Yeast
Sprinkle 5 g of wine yeast evenly over the crushed grapes and juice mixture. Stir gently to incorporate the yeast into the must.

Add Sulfites
Add 2 g of sulfites to the mixture to prevent unwanted microbial growth. Stir well to ensure even distribution.

Monitor Fermentation
Allow the mixture to ferment in a temperature-controlled environment. Monitor the fermentation process over the next 10-14 days, stirring once a day.

Add Water and Sugar
After fermentation, add 500 ml of water and 10 g of sugar to the mixture to balance the flavors. Stir gently to combine.

Incorporate 2 g of acid blend into the mixture to enhance the acidity and overall flavor profile of the wine.

Press and Transfer
After the desired fermentation period, press the mixture to separate the liquid from the solids. Transfer the resulting wine into a clean fermentation vessel.

Allow the wine to age for at least 6 months in a cool, dark place. This will develop the flavors and characteristics of the wine.
