Prepare the Cinnamon Simple Syrup
In a small saucepan, combine equal parts sugar and water with a cinnamon stick. Heat over medium until the sugar dissolves completely. Allow to simmer for 5 minutes, then remove from heat and let cool. Store in a jar.

Brew the Coffee
Brew 6 oz of your favorite coffee. Ensure it is hot and freshly made for the best flavor.

Combine the Ingredients
In a heatproof glass or coffee mug, add 1.5 oz of Jameson Irish Whiskey and 1 oz of the cinnamon simple syrup. Pour in the freshly brewed coffee and stir well to combine.

Whip the Cream
In a mixing bowl, use a hand mixer to whip 1 cup of heavy whipping cream until soft peaks form. Add sugar to taste and a pinch of ground cinnamon, and whip until fully combined.

Serve
Top the coffee mixture with a generous dollop of whipped cream and sprinkle with a little ground cinnamon. Serve immediately.
