Method

Preparing the Prime Rib

  1. 1

    Season the Roast

Preheat your oven to 450°F (230°C). While the oven is heating, rub the prime rib roast all over with olive oil. Then, generously season it with kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Make sure to cover all sides of the meat evenly.

  2. 2

    Roasting the Prime Rib

Place the seasoned roast on a rack in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to develop a nice crust. After 20 minutes, reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  3. 3

    Resting the Roast

Once the roast is done, remove it from the oven and let it rest for at least 20 minutes before slicing. This will allow the juices to redistribute, ensuring a tender and juicy prime rib.

Preparing the Mashed Potatoes

  1. 4

    Boil the Potatoes

Peel and chop the potatoes into evenly sized pieces. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.

  2. 5

    Mashing the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash the potatoes with a potato masher or fork until smooth and creamy. Adjust seasoning to taste.
