Base Preparation

Prepare the Gelato Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot but not boiling.

Infuse Vanilla
Split the vanilla bean in half lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Allow it to steep for about 15 minutes off the heat.

Cool the Base
Remove from heat, strain to remove the vanilla pod, and stir in the salt. Let the base cool to room temperature, then refrigerate until completely chilled.
Salted Caramel Preparation

Make the Caramel
In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts into a golden-brown liquid.

Incorporate Cream
Remove from heat and slowly whisk in the heavy cream. Be careful as it will bubble up. Add sea salt to taste and set aside to cool.
Belgian Dark Chocolate Preparation

Melt Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or in the microwave, stirring until smooth.
Gelato Finalization

Churn the Gelato
Once the gelato base is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions.

Mix in Flavors
In the last few minutes of churning, swirl in the salted caramel and melted dark chocolate to incorporate.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
