Cookie Dough Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set aside.

Cream Butter and Sugars
In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Add Eggs and Vanilla
Add the large eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Fold in Chocolate Chips
Gently fold in the chocolate chips until evenly distributed throughout the dough.

Scoop and Bake
Using a cookie scoop or tablespoon, drop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.

Cool Cookies
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Assemble the Chipwich

Prepare Ice Cream
While the cookies are cooling, take the vanilla ice cream out of the freezer and let it soften for about 5-10 minutes.

Scoop Ice Cream
Once the cookies are cool, scoop about 1/4 cup of softened vanilla ice cream onto the bottom side of one cookie.

Sandwich the Cookies
Place another cookie, bottom side down, on top of the ice cream and gently press together to form a sandwich.

Repeat Process
Repeat the process for the remaining cookies and ice cream.

Freeze to Set
Place the assembled chipwiches back in the freezer for about 30 minutes to set before serving.
