Muddle the Mint
In a cocktail shaker, add the fresh mint leaves and Demerara sugar. Gently muddle the mint with the sugar using a muddler or the back of a spoon to release the mint's essential oils, but be careful not to tear the leaves too much.

Add the Spirits
Pour the Plantation Dark Rum and Plantation Overproof Rum into the shaker with the muddled mint and sugar mixture.

Incorporate Lime Juice
Add the fresh lime juice to the shaker. This will provide acidity to balance the sweetness of the sugar.

Add Ice
Fill the shaker with ice cubes to the top. This will chill the ingredients and dilute the mixture slightly as you shake.

Shake the Mixture
Secure the shaker lid and shake vigorously for about 15-20 seconds until the mixture is well chilled.

Strain into Glass
Strain the mixture into a chilled glass filled with crushed ice, allowing the mint leaves to remain in the shaker.

Add Bitters
Add 2 dashes of Angostura bitters on top of the drink for added complexity and aroma.

Garnish
Garnish with a sprig of fresh mint for a refreshing aroma as you sip.
