Prepare Jerk Chicken

Marinate the Chicken
In a bowl, combine the jerk seasoning, olive oil, lime juice, and salt. Mix well. Add the chicken breasts, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for best flavor.

Cook the Chicken
Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Grill or cook the chicken for about 6-7 minutes per side, or until cooked through and juices run clear. Remove from heat and let rest for 5 minutes before slicing.

Mix Slaw Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, sliced red bell pepper, chopped green onions, and chopped cilantro. Toss to combine.

Make Dressing
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and salt to taste.

Combine Slaw and Dressing
Pour the dressing over the slaw mixture and toss until everything is well coated. Refrigerate for at least 15 minutes before serving.
Assemble Sandwich

Prepare Buns
Toast the burger buns on the grill or in a toaster until lightly golden.

On the bottom half of each bun, layer lettuce leaves, sliced jerk chicken, sliced tomatoes, and a generous amount of Caribbean coleslaw. Top with the other half of the bun.
