Dough

Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt.

  2. 2

    Add Butter

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

  4. 4

    Chill Dough

Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook the Filling

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.

  2. 6

    Add Ground Beef

Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until browned.

  3. 7

    Season the Filling

Stir in the scotch bonnet pepper, ground allspice, thyme, salt, and black pepper. Cook for another 5 minutes until the mixture is well combined. Remove from heat and let it cool.

Assembly and Baking

  1. 8

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 9

    Roll Out Dough

On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter to cut out circles (about 6 inches in diameter).

  3. 10

    Fill Patties

Place a tablespoon of the cooled filling in the center of each circle. Fold the dough over to create a half-moon shape, and crimp the edges with a fork to seal.

  4. 11

    Bake the Patties

Place the patties on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown.
