Fried Ripe Plantains
Harry's Sweet Sauce
Method
Preparing the Fried Ripe Plantains
- 1
Peel and Slice Plantains
Carefully peel the ripe plantains. Cut them diagonally into thick slices, about 1 inch wide.
- 2
Heat the Oil
In a large frying pan, pour in the vegetable oil and heat it over medium heat until hot.
- 3
Fry the Plantains
Once the oil is hot, carefully add the sliced plantains in batches. Fry each side for about 2-3 minutes or until golden brown.
- 4
Season with Salt
Remove the fried plantains from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt.
Making Harry's Sweet Sauce
- 5
Combine Ingredients
In a small saucepan, combine brown sugar, water, vanilla extract, and cinnamon.
- 6
Cook the Sauce
Bring the mixture to a boil over medium heat, stirring constantly until the sugar has dissolved completely.
- 7
Simmer
Reduce heat to low and let the sauce simmer for about 5 minutes until it thickens slightly.
- 8
Serve Plantains with Sauce
Drizzle Harry's sweet sauce over the fried plantains and serve warm.
