    In a large pot, combine the dried sorrel calyces and water. Bring the mixture to a boil over medium-high heat.

    Once the water reaches a boil, add the sliced ginger, cloves, and allspice berries. Stir well and reduce the heat to low.

    Cover the pot and let the mixture simmer for about 30 minutes, allowing the flavors to meld together.

    After 30 minutes, remove the pot from the heat and let it cool slightly. Strain the mixture through a fine mesh sieve into a large bowl or pitcher, discarding the solids.
