Prepare the Ahi Tuna Patty

Chop the Ahi Tuna
Chop the ahi tuna into small pieces, ensuring they are uniform for even cooking.

Mix Ingredients
In a mixing bowl, combine the chopped ahi tuna, green onion, soy sauce, sesame oil, grated ginger, minced garlic, and black pepper. Mix well until all ingredients are fully combined.

Form Patties
Divide the mixture into two equal portions and form them into patties, about 6 oz each.

Sear the Patties
Heat a non-stick skillet over medium-high heat. Lightly oil the skillet and place the patties in the pan. Sear for about 2-3 minutes on each side, or until the outside is crisp and the inside is still medium-rare.
Prepare the Sriracha Mayo

In a small bowl, mix together the mayonnaise, sriracha sauce, and lime juice until smooth and well combined.

Assemble the Burger
Spread a tablespoon of ponzu sauce on the bottom half of each bun. Place a layer of mixed greens on top, followed by the seared ahi tuna patty, sliced tomato, and a generous dollop of sriracha mayo. Top with the other half of the bun.
