Method

Preparing the Calamari

    Clean and Slice Calamari

    Rinse the fresh calamari under cold water and pat dry. Cut the calamari into rings, about 1/2 inch thick.

    Prepare Breading

    In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and buttermilk until well blended.

    Coat Calamari

    Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until evenly coated. Place on a baking sheet.

Frying the Calamari

    Heat Oil

    In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry Calamari

    Fry the breaded calamari in batches, avoiding overcrowding the pot, for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove and drain on paper towels.

Making the Spicy Marinara Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Simmer Sauce

    Add crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir well and let simmer for 15-20 minutes. Stir in chopped fresh basil before serving.

Serving

    Plate and Serve

    Arrange the crispy calamari on a serving platter and serve hot with the spicy marinara sauce on the side for dipping.
