Filet Mignon Preparation

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Rub the steaks with olive oil, then season both sides generously with salt and black pepper.

    Sear the Steaks

    Heat a large skillet over medium-high heat. Once hot, add the steaks to the pan. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Aromatics

    In the last 2 minutes of cooking, add the fresh rosemary and crushed garlic cloves to the skillet, spooning the garlic-infused oil over the steaks.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for at least 5 minutes before serving.

    Boil the Potatoes

    Peel and cut the russet potatoes into quarters. Place the potatoes in a large pot, cover with cold water, and add salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Prepare Garlic

    While the potatoes are boiling, peel and mince the garlic cloves.

    Mash the Potatoes

    Drain the cooked potatoes and return them to the pot. Add the minced garlic, butter, and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste.
