Preheat the Oven
Preheat your oven to 200°C (390°F).

Making the Fondant

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth. Stir occasionally to combine.

Mix Sugar, Eggs, and Vanilla
In a separate bowl, whisk together the granulated sugar and eggs until well combined. Add in the vanilla extract and a pinch of salt, and mix until the mixture is pale and fluffy.

Add Flour
Sift the all-purpose flour over the chocolate mixture and fold it in gently until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Baking

Bake the Fondants
Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, until the edges are firm but the center is still soft.

Rest and Serve
Remove the ramekins from the oven and let them rest for 1-2 minutes. Carefully run a knife around the edges to loosen and invert onto serving plates.

Plate the Fondant
Serve each fondant warm with a scoop of vanilla ice cream on the side.
