    Activate Yeast

    In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    Add flour and salt to the yeast mixture. Mix until a dough forms. Knead for about 5-7 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Pretzel Sticks

    Preheat the oven to 425°F (220°C). Divide the dough into 8 equal pieces. Roll each piece into a long stick, about 12 inches long.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully drop each pretzel stick into the boiling water for about 30 seconds. Remove and place on a baking sheet lined with parchment paper.

    Egg Wash

    Brush each pretzel stick with the beaten egg and sprinkle with coarse sea salt.

    Bake

    Bake in the preheated oven for 12-15 minutes or until golden brown.

    Allow the pretzel sticks to cool slightly before serving with warm beer cheese.
