    Cook the Bacon or Sausage

    In a skillet over medium heat, cook the Irish bacon or sausage until crispy and browned, about 4-5 minutes on each side. Remove from the skillet and set aside.

    Fry the Eggs

    In the same skillet, crack the eggs and fry them to your desired doneness, seasoning with salt and black pepper. This should take about 2-3 minutes.

    Melt the Cheese

    Place the cheddar cheese slices on top of the fried eggs in the skillet and cover for about 1 minute, until the cheese is melted.

    Toast the Bread

    In another skillet, melt the butter over medium heat. Add the slices of white bread and toast until golden brown on both sides.

    Assemble the Sandwich

    On two slices of toasted bread, layer the cooked bacon or sausage, followed by the fried eggs with melted cheese. Top with the remaining slices of toasted bread to complete the sandwich.

    Cut the sandwich in half and serve immediately while hot.
