Prepare the Eggs
Place the large eggs in a saucepan and cover them with cold water. Bring to a boil, then remove from heat and cover. Let sit for 10-12 minutes. Once cooked, transfer eggs to an ice bath to cool. Peel and set aside.

Prepare the Sausage Mixture
In a bowl, combine the sage sausage with salt and black pepper. Mix until well combined.

Encasing the Eggs
Divide the sausage mixture into four equal portions. Flatten each portion in your hand and wrap it around a peeled egg, ensuring it is completely covered.

Baking the Eggs
Preheat your oven to 375°F (190°C). Place the breaded Scotch eggs on a baking sheet lined with parchment paper. Melt the butter and brush it over the eggs. Bake for 25-30 minutes, or until golden brown and cooked through.

Serve
Remove from the oven and let cool slightly. Serve warm with slices of bread and butter on the side.
