    Sauté the Beef

    In a large pot, heat the olive oil over medium-high heat. Add the beef chuck and sauté until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the baby carrots and sauté for an additional 2 minutes.

    Combine Ingredients

    Return the browned beef to the pot. Add the cubed potatoes, beef broth, bay leaves, thyme, salt, and black pepper. Stir to combine.

    Simmer

    Bring the stew to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well combined.

    Serve

    Remove bay leaves before serving. Ladle the stew into bowls and serve hot with bread and butter on the side.
