    Prepare the Chips

    Preheat your oven to 425°F (220°C). Slice the potatoes into thin rounds and place them in a bowl. Drizzle with olive oil, and season with salt and black pepper. Toss until evenly coated.

    Bake the Chips

    Spread the potato slices in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.

    Cook the Sausage

    In a skillet over medium heat, crumble the Irish-style sage sausage and cook until browned and fully cooked, about 8-10 minutes. Remove from heat.

    Assemble the Nachos

    Once the chips are baked, remove them from the oven and layer them on a serving platter. Sprinkle the crumbled sausage over the top, followed by the cheddar jack cheese.
