    Prepare the Fries

    Peel the potatoes and cut them into thick strips. Rinse under cold water to remove excess starch, then pat dry with a towel.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the potato strips in batches for about 5-6 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and has no lumps.

    Prepare the Fish

    Pat the pollock fillets dry with a paper towel. Dip each fillet into the batter, allowing excess to drip off.

    Fry the Fish

    Carefully place the battered fillets into the hot oil, frying in batches to avoid overcrowding. Cook for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Serve

    Serve the crispy fish with steak fries, a sprinkle of malt vinegar, and lemon wedges on the side.
