    Preparation

    Wash and peel the potatoes, then cut them into small cubes. Clean the leeks thoroughly and slice them into thin rounds. Chop the onion finely.

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and sliced leeks, sautéing until they become soft and translucent, about 5-7 minutes.

    Cook Potatoes

    Add the cubed potatoes to the pot and stir for a couple of minutes. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it to a blender in batches. Return to the pot if using a blender.

    Finish with Cream

    Stir in the heavy cream, salt, and black pepper. Heat gently for another 5 minutes, ensuring it doesn't boil.

    Garnish and Serve

    Ladle the soup into bowls, garnish with fresh parsley, and serve hot with bread and butter.
