    Prepare the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Cook the Sausages

    In a large skillet, cook the Irish sausages over medium heat until browned and cooked through, about 15 minutes. Remove and set aside.

    Make the Gravy

    In the same skillet, add chopped onion and sauté until soft. Sprinkle flour over the onions, stirring for about 1 minute. Gradually add the beef stock while stirring until the mixture thickens. Add Worcestershire sauce, salt, and pepper to taste.

    Mash the Potatoes

    Once the potatoes are tender, drain and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper.

    Serve

    Place a generous amount of mashed potatoes on a plate, top with sausages, and pour gravy over the top. Enjoy!
