Method

Prepare the Filling

    Sauté the Vegetables

    In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

    Add Remaining Vegetables

    Add the shredded cabbage, grated carrots, chopped green bell pepper, and chopped mushrooms to the skillet. Stir well to combine and cook for about 5-7 minutes until the vegetables are slightly softened.

    Season the Filling

    Pour the soy sauce and add black pepper to the vegetable mixture. Stir to combine and cook for an additional 2-3 minutes. Remove from heat and let it cool.

Assemble the Spring Rolls

    Prepare the Wrappers

    Lay a spring roll wrapper on a clean, flat surface, with one corner pointing towards you.

    Fill the Wrapper

    Place about 2-3 tablespoons of the cooled vegetable filling near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll tightly away from you.

    Seal the Roll

    Moisten the top corner of the wrapper with a little water to seal the spring roll. Repeat with remaining wrappers and filling.

Fry the Spring Rolls

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Spring Rolls

    Carefully add the spring rolls in batches to the hot oil. Fry for about 3-4 minutes or until they are golden brown and crispy. Make sure not to overcrowd the pot.

    Drain Excess Oil

    Remove the fried spring rolls with a slotted spoon and place them on paper towels to drain any excess oil.

    Arrange the crispy spring rolls on a serving plate and serve with sweet chili sauce on the side for dipping.
