Fish and Coating

Frying

Method

Preparation

  1. 1

    Prepare the Fish

Rinse the flounder fillets under cold water and pat dry with paper towels.

  2. 2

    Set up Breading Station

In one shallow dish, place the all-purpose flour mixed with salt, black pepper, and paprika. In another shallow dish, whisk together the eggs and milk until well combined. In a third shallow dish, combine the cornmeal with a pinch of salt.

Breading

  1. 3

    Dredge the Fish

Coat each flounder fillet first in the seasoned flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off, and finally coat it in the cornmeal.

Frying

  1. 4

    Heat the Oil

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until shimmering.

  2. 5

    Fry the Flounder

Carefully place the breaded flounder fillets in the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.

  3. 6

    Drain and Serve

Once cooked, transfer the crispy flounder to a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges.
