    Wash and chop all the vegetables as per the specifications in the ingredients list. Mince the garlic and ginger.

    In a large pot, heat the vegetable oil over medium heat. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.

    Add the Curry Paste

    Stir in the green curry paste and cook for 1-2 minutes, allowing the spices to bloom.

    Incorporate Coconut Milk

    Pour in the coconut milk and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer.

    Add Vegetables

    Add the sliced bell pepper, diced zucchini, sliced carrot, broccoli florets, and snow peas to the pot. Stir gently to coat the vegetables in the sauce.

    Stir in the soy sauce, lime juice, and season with salt and black pepper to taste. Let the curry simmer for about 10-15 minutes, or until the vegetables are tender.
