House-made Ginger Soda (make ahead, 20–30 minutes active)

Make ginger syrup

Combine sliced ginger, sugar, and 1 cup water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer gently for 10 minutes to extract ginger flavor.

Remove from heat and let the mixture steep for 20 minutes to intensify the flavor. Strain through a fine-mesh sieve or cheesecloth into a heatproof container, pressing on the solids to extract liquid. Discard solids.

Stir in 2 tablespoons fresh lemon juice to the warm syrup. Cool the syrup to room temperature, then refrigerate. The syrup will keep 1–2 weeks refrigerated.

To make ginger soda for cocktails: combine 2 oz chilled ginger syrup with 12 oz chilled club soda (adjust to taste). For the recipe below, use 4 oz prepared ginger soda (approx. 2/3 oz syrup + soda).

Fill a highball glass or Collins glass with ice (about 1 cup).

Add 2 oz rye whiskey and 1/2 oz fresh lemon juice to a mixing glass or directly into the serving glass.

Add 3 dashes of Angostura bitters.

Top with 4 oz house-made ginger soda (pre-mixed: ginger syrup + club soda) and gently stir once or twice to combine — avoid over-stirring to keep bubbles.

Garnish with a lemon twist or wedge. Optionally express lemon oils over the drink before dropping the twist in.
