Make mustard-honey spread
In a small bowl combine 3 tsp Dijon, 1 tsp whole-grain mustard, 2 tsp honey, 2 tbs mayonnaise, 1 tsp lemon juice, 1 tsp freshly ground black pepper and 1/4 tsp salt. Whisk until smooth and tasting balanced — adjust honey or lemon if you want sweeter or brighter. Set aside.
Slice the roll(s) horizontally and lightly toast cut sides in a toaster or skillet until just golden — this prevents sogginess. If using large rolls, halve rolls to make 4 sandwiches.
Core and thinly slice the Granny Smith apple (about 1/8-inch slices). Toss apple slices in a teaspoon of lemon juice (from the spread) or a light sprinkle of lemon to prevent browning and to add brightness.
Cook Bacon & Warm Meats
Heat a large skillet over medium heat. Add 1 tsp neutral oil and place 8 strips of bacon in a single layer. Cook 3–5 minutes per side until crisp to your preference. Transfer bacon to paper towel-lined plate to drain, reserve bacon fat in pan if desired for extra flavor (wipe excess if too much).
Using the same skillet over medium-low, warm the roast turkey and smoked ham slices for about 30–60 seconds per side just until heated and slightly caramelized at the edges. This step concentrates flavor and helps the cheese melt later. Transfer meats to a plate.
Assemble & Toast
Butter the cut sides of the rolls lightly with the 2 tbs unsalted butter (evenly divided). Heat a clean skillet over medium-low heat. Place bottom halves, buttered-side down, on skillet just to warm (about 30 seconds). Spread about 1 tbs of the mustard-honey spread onto each bottom roll immediately after removing from heat so it softens into the bread.
Layer on each bottom roll: 2 oz warmed turkey (about half the turkey per sandwich), 1 oz warmed ham, 1 slice Swiss cheese (fold if needed), 2 strips of crispy bacon, a few apple slices (3–4 thin slices), and a small handful (about 1/4 cup) of baby arugula. Spread about 1 tbs of mustard-honey spread on each top roll.
Place tops on sandwiches. Return assembled sandwiches to the skillet seam-side down and press gently with a spatula or weight; toast over medium-low heat 2–3 minutes per side, or until bread is golden and cheese is melted. If your pan is too small, crisp them one at a time or use an oven: 350°F (175°C) for 6–8 minutes wrapped lightly in foil.
Finish & Serve
Transfer sandwiches to a cutting board. Let rest 1 minute, then slice in half on the diagonal. Serve warm so the Swiss is melty, apples add a bright crunch, and the mustard-honey spread ties flavors together.
Suggested accompaniments: kettle chips, dill pickle, or a simple mixed greens salad with vinaigrette.
