Method

Prepare the Tocino

    Marinate

    In a bowl, mix together brown sugar, soy sauce, minced garlic, salt, and black pepper. Add the sliced tocino and marinate for at least 3 hours or overnight in the refrigerator.

    Cook

    Heat a pan over medium heat. Add the marinated tocino and cook until caramelized and cooked through, about 10-15 minutes. Set aside.

Prepare the Longganisa

    Cook Longganisa

    In the same pan, cook the longganisa over medium heat until browned and cooked through, about 8-10 minutes. Set aside.

Cure the Eggs

    Prepare Brine

    In a saucepan, dissolve salt and sugar in water over medium heat. Allow to cool.

    Cure Eggs

    Place the eggs in a container and pour the cooled brine over them. Cover and refrigerate for 2-3 days before serving.

Serve

    Combine

    On a serving platter, arrange the cooked tocino, longganisa, and cured eggs. Enjoy with rice or as a stick food platter.
