Dough Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    Roast the eggplant until tender, about 20 minutes at 400°F (200°C). In a skillet, heat olive oil, sauté garlic until fragrant, then add chopped fresh tomatoes and basil. Combine with roasted eggplant and Toma cheese. Season with salt and pepper to taste.

    Assemble the Ravioli

    Roll out the dough into thin sheets. Cut into squares, place a spoonful of filling on half of the squares, and cover with the other half. Seal the edges with a fork to secure the filling.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Gently drop the ravioli into the boiling water and cook for about 4-5 minutes until they float to the surface. Remove and drain.

    Make the Sauce

    In a saucepan, heat olive oil and sauté minced garlic. Add chopped fresh tomatoes and simmer for about 10 minutes. Season with salt, pepper, and stir in fresh basil.

Serving

    Plate the cooked ravioli and top with the fresh tomato sauce. Garnish with extra basil and serve warm.
