Cooking the Pork Belly

Prepare the Pork
In a large pot, combine water, salt, and black pepper. Add the pork belly and bring to a boil. Reduce heat and simmer for about 1.5 hours or until tender.

Crisp the Pork
Remove the pork belly from the pot and let it cool. Once cooled, heat oil in a deep pan over medium-high heat. Fry the pork belly until the skin is golden brown and crispy, about 5-10 minutes. Remove and drain on paper towels.
Cooking the Mustard Greens

Sauté the Greens
In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the mustard greens and cook until wilted. Season with salt and pepper to taste.
Preparing Pinakurat

Mix the Pinakurat
In a small bowl, combine pinakurat, minced garlic, and chili pepper. Mix well and let it sit for a few minutes.
