Humboldt Squid

Method

Preparing the Humboldt Squid

    Clean the Squid

    Begin by cleaning the Humboldt squid. Remove the head and innards, and peel off the skin. Rinse under cold water and pat dry.

    Marinate the Squid

    In a bowl, combine olive oil, minced garlic, salt, black pepper, and lemon juice. Add the cleaned squid and let it marinate for at least 30 minutes.

    Grill the Squid

    Preheat the grill to medium-high heat. Grill the marinated squid for about 3-4 minutes on each side until cooked through and slightly charred.

Making Banana Ketchup

    Combine Ingredients

    In a saucepan, combine mashed bananas, vinegar, sugar, soy sauce, chopped onion, garlic powder, salt, black pepper, and cayenne pepper.

    Cook the Ketchup

    Cook over medium heat, stirring frequently until the mixture thickens, about 15-20 minutes. Remove from heat and let it cool.

Preparing Chili Escabeche

    In a saucepan, combine sliced carrots, red onion, jalapeños, white vinegar, water, sugar, salt, bay leaves, and black peppercorns.
