Roast the Pork
Transfer the seared pork to the oven and roast for about 20-25 minutes, or until the internal temperature reaches 63°C (145°F). Remove from the oven and let it rest for 10 minutes before slicing.

Prepare the Sauce
In the same skillet used for the pork, add minced garlic and white wine. Cook for a few minutes until the wine reduces by half. Add the heavy cream and Tallegio cheese, stirring until melted and smooth. Season with salt and pepper to taste.

Fry the Pommes Dauphine
Heat oil in a deep pan. Using a piping bag or spoon, drop small amounts of the potato mixture into the hot oil. Fry until golden brown, then drain on paper towels.
