    In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Duck Salumi

    While the pasta cooks, slice the duck salumi into bite-sized pieces. Heat the olive oil in a large skillet over medium heat, then add the salumi and sauté until crispy, about 4-5 minutes.

    In a bowl, whisk together the duck eggs, grated Qualicum cheese, chili flakes, and a pinch of salt and black pepper until well combined.

    Once the pasta is cooked and drained, add it to the skillet with the duck salumi. Pour the duck egg mixture over the hot pasta, stirring quickly to create a creamy sauce, adding reserved pasta water as needed to achieve desired consistency.
