Make the Pie Crust

    Prepare the Dough

    In a mixing bowl, combine all-purpose flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    After chilling, roll the dough out on a floured surface to fit your pie pan. Place the dough in the pie pan and trim the edges. Prick the bottom with a fork to prevent bubbling.

Prepare the Filling

    Combine Ingredients

    In a mixing bowl, whisk together the coconut milk, sweetened condensed milk, egg yolks, vanilla extract, and cornstarch until smooth. Fold in the shredded young coconut meat.

Assemble and Bake

    Fill and Bake

    Pour the filling into the prepared pie crust. Bake in a preheated oven at 350°F (175°C) for 40-45 minutes, or until the filling is set and the top is lightly golden.

    Cool and Serve

    Allow the pie to cool at room temperature for at least 30 minutes before slicing. Serve warm or chilled.
