    Prepare the Chicken

    In a large pot, heat a little oil over medium heat. Add the minced garlic, chopped onion, and sliced ginger. Sauté until fragrant.

    Cook the Chicken

    Add the chicken pieces and cook until they are lightly browned on all sides.

    Add Liquid and Rice

    Pour in the water or chicken broth and bring to a boil. Once boiling, add the glutinous rice and fish sauce.

    Simmer

    Reduce the heat to low, cover, and let it simmer for about 30-40 minutes or until the rice is fully cooked and the mixture is thickened. Stir occasionally to prevent sticking.

    Season

    Season with salt and pepper to taste.

    Serve

    Ladle the arroz caldo into bowls and garnish with chopped green onions, sliced hard-boiled eggs, and lemon or calamansi on the side.
