Method

Make the Dough

    Mix the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

Prepare the Filling

    Cook the Shrimp

    In a skillet, heat a little olive oil over medium heat. Add the shrimp and cook until pink, about 3-4 minutes. Remove from heat and let cool.

    Mix the Filling

    In a bowl, combine the cooked shrimp, roasted red peppers, ricotta, Parmesan, garlic, salt, and black pepper. Mix until well combined.

Assemble the Agnolotti

    Roll the Dough

    Divide the dough into 4 pieces. Roll out each piece thinly using a pasta machine or rolling pin.

    Fill and Shape

    Cut the rolled dough into squares. Place a small amount of filling in the center of each square. Fold the dough over to form a triangle and press the edges to seal.

Cook the Agnolotti

    Boil the Agnolotti

    Bring a large pot of salted water to a boil. Add the agnolotti and cook for 3-4 minutes until they float to the surface.

    Prepare the Sauce

    In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, then add chopped basil and lemon juice. Season with salt and pepper.

    Combine

    Drain the agnolotti and add them to the skillet with the sauce. Toss gently to coat and serve hot.
