Cook chorizo
Heat a large skillet over medium-high heat. Add the loose chorizo (no additional oil if the chorizo is fatty). Break up with a spoon and cook 5–7 minutes until browned and cooked through. If using very lean chorizo, add 1 teaspoon oil to the pan. Transfer cooked chorizo to a bowl and drain off excess fat, leaving approximately 1 tablespoon in the skillet.

Cook mushrooms and tomatoes
Add the diced mushrooms to the skillet and cook 4–5 minutes until they release moisture and begin to brown. Add the diced tomatoes and cook 2–3 minutes until tomatoes have softened and released some juice. Season with 3/4 teaspoon salt and 1/2 teaspoon black pepper. Stir to combine.

Combine filling components
Return the cooked chorizo to the skillet and mix with the mushroom-tomato mixture. Remove from heat and fold in 1 cup shredded sharp cheddar and 1 cup crumbled queso fresco until cheese is evenly distributed and slightly melted by the residual heat. Taste and adjust salt/pepper if needed. Keep warm while you prepare salsa and tortillas.

Char or boil the tomatillos and jalapeño: place husked tomatillos and the jalapeño on a hot dry skillet or under a broiler and char until black spots appear and they soften, 6–8 minutes, turning as needed. Alternatively, simmer them in lightly boiling water 5 minutes until softened. Let cool slightly.

Blend salsa verde: In a blender or food processor add charred tomatillos, jalapeño (start with half the pepper if you want milder), 1/2 cup packed cilantro, 2 tablespoons fresh lime juice, 1/2 teaspoon salt, and 2 tablespoons water. Pulse until smooth but still slightly textured. Taste and adjust salt, cilantro, or lime. Transfer to a bowl and refrigerate or keep at room temperature until assembly.

Warm tortillas: Heat a clean skillet or griddle over medium heat. Brush each tortilla lightly with a little butter or oil. Warm each tortilla 30–45 seconds per side until pliable and slightly charred in spots. Keep wrapped in a clean towel to stay warm.

Assemble Verde Mile: Spoon about 1/3 cup of the chorizo–mushroom–tomato–cheese filling onto the center of each warm tortilla. Top each portion with 1–2 tablespoons salsa verde (adjust to taste). Sprinkle an additional tablespoon of crumbled queso fresco and a tablespoon of shredded cheddar if desired for extra cheesiness.

Garnish and serve: Garnish each with fresh cilantro leaves and serve with lime wedges on the side for squeezing. Serve immediately while warm.
