Sparkling Base

Method

Prep & Chill

  1. 1

    Chill bottles and glasses

Place the sparkling wine, optional non‑alcoholic sparkling, and all juices in the refrigerator for at least 2 hours before serving. Chill glasses in the fridge or freezer for 15–30 minutes prior to service.

  2. 2

If you prefer your juices sweeter, stir simple syrup into the orange juice (start with 1 tablespoon per cup, up to 2 tablespoons per cup) until you reach desired sweetness. Keep juices chilled.

Set Up Mimosa Kit Station

  1. 3

Arrange the chilled sparkling wine and optional non‑alcoholic sparkling wine on the beverage table. Place pitchers or carafes of each juice (orange, blood orange, grapefruit, pineapple) nearby and label them so guests can choose.

  2. 4

Place a tray with garnishes (orange wheels, blood orange or grapefruit slices, berries, mint) and a bowl of ice (if you want guests to chill glasses or keep bottles cold). Provide a small spoon or tongs for the garnishes.

  3. 5

Set out 10–12 clean champagne flutes or stemless glasses so guests can serve themselves.

Assembling Mimosas

  1. 6

    Classic ratio

For a classic mimosa, pour 3 ounces (about 3/4 cup) of chilled orange juice into a flute, then top with 3 ounces (about 3/4 cup) of chilled sparkling wine. Pour gently down the side of the glass to preserve bubbles.

  2. 7

    Brut‑forward (less sweet)

Use 1 part orange juice to 2 parts sparkling wine — for example, 2 ounces juice and 4 ounces sparkling wine per glass.

  3. 8

    Juice variations

To make a blood orange mimosa, substitute blood orange juice 1:1 for the orange juice. For grapefruit or pineapple mimosas, use the same volume of those juices. For a split or flight, fill glasses halfway with two different juices side‑by‑side and top each with sparkling wine.

  4. 9

For a lower‑alcohol or alcohol‑free option, substitute chilled non‑alcoholic sparkling wine or club soda for the sparkling wine using the same ratios.

Garnishing & Serving

  1. 10

Garnish each assembled mimosa with an orange wheel on the rim, a few berries dropped into the glass, or a small mint sprig. If using citrus wheels, you can cut a small slit to perch it on the rim.

  2. 11

Serve immediately while sparkling wine is fizzy. Replenish juices and sparkling wine as guests refill. Keep unused bottles chilled.

Cleanup & Storage

  1. 12

Recap and store any remaining sparkling wine upright in the refrigerator; use within 1–3 days for best bubbles. Store fresh juices covered and use within 48 hours.
