    Prepare vegetables

    Wash and thoroughly dry the mixed salad greens using a salad spinner or clean kitchen towels. Halve the cherry tomatoes, thinly slice the cucumber, and very thinly slice the red onion. Shred the carrot if not pre-shredded.

    Toast nuts/seeds

    In a small dry skillet over medium heat, add the nuts or seeds and toast, stirring frequently, until fragrant and lightly golden, about 2–3 minutes. Remove from heat and let cool.

    Assemble salad

    In a large bowl, combine the dried salad greens, halved tomatoes, sliced cucumber, sliced red onion, and shredded carrot. If using, sprinkle the crumbled feta or goat cheese over the top and then add the cooled toasted nuts or seeds.

Dressing

    Make dressing

    In a small bowl or jar, combine the red wine vinegar, Dijon mustard, honey (or maple), minced garlic, salt, pepper, and optional lemon juice. Whisk or shake to dissolve the mustard and honey. Slowly stream in the extra-virgin olive oil while whisking (or add to the jar and shake vigorously) until the dressing is emulsified and slightly thickened. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.

    Dress salad

    Right before serving, drizzle about half to two-thirds of the dressing over the salad (reserve some for anyone who prefers less). Gently toss the salad with tongs to coat the greens and vegetables evenly. Serve immediately on individual plates or bowls with extra dressing on the side.
