Cook the hash
Heat a 10-inch skillet over medium heat. Add 1 tbs olive oil and 1 tbs butter. When butter melts and foams, add diced potatoes and spread into a single layer. Season with 1/2 tsp salt, 1/4 tsp black pepper and 1/8 tsp smoked paprika. Cook undisturbed 6-7 minutes to brown, then stir and continue to cook another 6-8 minutes until tender and crisp. Add the sliced 1/2 yellow onion and 1 tsp minced garlic; cook 2-3 minutes until onion is softened and fragrant. Stir in 1 cup packed spinach until wilted and remove hash to one side of the skillet or transfer to a plate and keep warm.

Fry the eggs
Lower heat to medium-low, add remaining 1 tbs butter to the skillet. Crack 4 eggs into the pan spaced apart. Cook sunny-side up 3-4 minutes until whites set but yolks still runny; cover with a lid for 30-60 seconds if you prefer slightly set yolks. Season eggs with remaining salt and pepper and sprinkle chopped parsley and a pinch of smoked paprika over eggs.

Toast the bread
Toast 2 slices of multigrain bread until golden and crisp.

Prepare avocado spread
Halve and pit the avocado. Scoop flesh into a bowl and mash with 1 tsp lemon juice, 1/2 tsp salt and a pinch of red pepper flakes until slightly chunky.

Dress tomatoes
Toss halved cherry tomatoes with 1/2 tbs olive oil, a pinch of salt and a few cracks of black pepper.

Assemble tartines
Spread the mashed avocado evenly over each toasted slice. Top with dressed cherry tomatoes and microgreens or arugula. Finish with a light drizzle of olive oil and an extra pinch of red pepper flakes if desired.

Cook bacon
Preheat oven to 400°F (200°C). Lay 4 bacon slices on a foil-lined baking sheet spaced slightly apart. Bake 12-16 minutes depending on thickness until crisp. Transfer to paper towels to drain. Optionally brush with 2 tbs maple syrup in the last 2 minutes of cooking for a glazed finish.

Yogurt parfait
Spoon 1 cup Greek yogurt into a small bowl. Drizzle with 1 tbs honey and top with 1/2 cup granola. Serve alongside the bacon.

Make blueberry skillet cake batter
Preheat a small ovenproof skillet or nonstick pan to 375°F (190°C) if baking, or heat a nonstick skillet over medium-low for stovetop. In a bowl whisk 1 cup flour, 1 tsp baking powder, 2 tbs sugar and 1/4 tsp salt. In another bowl whisk 3/4 cup milk, 1 large egg, 2 tbs melted butter and 1/2 tsp vanilla. Combine wet into dry and stir just until combined; fold in 1/2 cup fresh blueberries.

Cook the cake
If using oven: grease a 6-8 inch ovenproof skillet, pour batter in and bake 15-18 minutes until golden and a toothpick comes out clean. If on stovetop: add 1 tbs butter to skillet, pour batter, cover and cook on very low 10-12 minutes until set on top and bottom golden—finish briefly under a broiler if needed. Let cool 3 minutes, then slice into wedges and serve warm.
