Slice and season
Slice the steak very thinly across the grain. If meat is difficult to slice thin, partially freeze for 20–30 minutes first. Thinly slice the onion, trim and slice mushrooms about 1/4-inch thick, and mince the garlic. Season the sliced steak with 1/2 tsp salt and 1/2 tsp black pepper and toss to coat.

Sear mushrooms and onions
Heat a large cast-iron skillet or heavy sauté pan over medium-high heat. Add 1 tbs neutral oil and 1/2 tbs butter. When butter foams, add the sliced onions and a pinch of salt. Cook, stirring occasionally, until soft and beginning to brown, about 6–8 minutes. Add the sliced mushrooms and continue to cook until mushrooms release liquid and brown, about 5 more minutes. Add the minced garlic in the last 30 seconds, then transfer the cooked onions and mushrooms to a bowl and keep warm.

Cook the steak
Return the pan to high heat and add the remaining 1/2 tbs butter and a drizzle of oil if needed. Add the seasoned thin steak in a single layer (work in batches if needed to avoid overcrowding). Sear for 30–60 seconds per side — you want just browned edges because meat is sliced thin. Use a spatula to break up any clumps and toss. Sprinkle the steak with 1 tsp Worcestershire sauce and the remaining 1/2 tsp salt and 1/2 tsp pepper; cook another 30 seconds. Return the onion and mushroom mixture to the pan and toss to combine and heat through, about 1 minute.

Prepare rolls
Split the hoagie rolls lengthwise without cutting through (or fully split if preferred). Lightly butter the cut sides with the softened butter. Place rolls, butter-side down, on a hot skillet or under a broiler for 1–2 minutes until toasted and golden — watch carefully to avoid burning.

Melt cheese over steak
Divide the hot steak, mushroom and onion mixture evenly among the toasted rolls. Layer 1–2 slices of Swiss cheese per sandwich (about 1–1.5 slices per half if using 6 slices for 4 rolls). To melt the cheese, cover the pan with a lid for about 1 minute or place the assembled sandwiches briefly under a broiler for 30–60 seconds until the cheese is melted and bubbling.

Finish
Remove from heat. Optionally season with a final pinch of black pepper. Serve hot immediately.
